For my first foray into all home cooked all the time, I made simmered japanese vegetables with chicken.
Those who know me are gasping. Chicken?!? Yep. Vegetarian me ate chicken. It was kinda good, kinda gross. If it wasn’t cooked in wheat free soy sauce and sugar for a long time I would never have been able to stomach it. I was hoping some how that the protein would help with the constant dissatisfaction that is the background to my food life.
But the veggies, particularly the burdock root was amazing. I don’t have pictures, but I’m sure I’ll make it again sometime.
